ABOUT


My name is Sebastien Brown, I am a French / British chef.

This is my story.

I grew up in multicultural family with European Jewish & Northern African origins. The 4th generation of my french ancestors who immigrated from France to Algeria were called the “black feet”. They brought back with them the culture of spices & Mediterranean cuisine. I remember the freshly baked Shabbat bread smell, seeing my grand mother rub the hot soaked semolina between her hands in a big old pot & during easter time the “ralochette”, 7 tree fruits compot taste in my mouth…

My memories of my childhood in England was filled with home grown beans & potatoes, feeling the soil  of my grandpa garden in my hands, mouth watering for gravy of the Sunday roast dinners, making cakes & the smell of lemon sponge & custard in the kitchen.

From this heritage, I developed a sense for culinary arts & eventually became a chef at the age of 20 after graduating from G. Ferrandi in Paris.

WELLNESS CUISINE PHILOSOPHY

This vision is taking inspiration from a balanced lifestyle, when daily physical & mental activities are complemented with healthy & nutritious food.

The ultimate ambition is to detoxify our body & prevent diseases from happening in our lives.

I believe nutrition should be seen as the foundation of health as well as a source of pleasure, satisfying your hunger & reviving your senses. By combining science of nutrition & the slow food movement, Mediterranean & Asian cuisine, my goal is to contribute to “a feel good experience” & educate the generation to come on what the future of cooking will be ultimately.

THE SECRET

When reducing the level of salt, sugar & saturated fat in cooking along with a diversified and adapted diet, health issues can be avoided & you will most likely, live a longer & happier life with less stress or anxiety.
